One thing I can’t resist making when Christmas is drawing near is Peanut Butter Balls or Buckeyes, as some people call them!
- 2 c. peanut butter
- 2 c. powdered sugar
- 1/4 c. butter
- 2 c. graham cracker crumbs
- 2 lbs. bakers chocolate or chocolate chips

Mix the peanut butter, powdered sugar, butter and graham cracker crumbs in large bowl. Form into 1″ balls and refrigerate 1 hour. Melt chocolate in double burner. Dip balls in chocolate and cool on wax paper.
Ideas to make them extra special:
- drizzle melted white chocolate or mint chocolate chips over them
- after dipping them in chocolate, roll them in coconut flakes or crushed rice crispies

I like to use heath bar pieces as a topping for these, it sticks better on peanut/chocolate bars but I am going to try it with this recipe!
