During the 12 Days of Christmas Swap on Craftster I received a cookie in a jar mix. I left it sitting on the kitchen table for about a month because it was just too pretty to actually use, but finally a couple of weeks ago I wanted cookies and opened the jar! They turned out perfect and were so delicious that I just had to share…

1 c. butter
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. quick oats
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 c. raisins
1 c. walnuts
6 oz. pkg. semi-sweet chocolate chips
1/2 c. flaked coconut
In the large bowl of an electric mixer, beat together butter, sugars, eggs and vanilla until mixture is light, about 2 minutes. Stir in remaining ingredients until blended. Drop batter by the heaping tablespoonful on a greased cookie sheet. Bake at 350 degrees for about 10 to 12 minutes or until cookies are very lightly browned. Don’t try to double the recipe.

A friend turned me onto TT and every newsletter has such affordable prices that I can keep trying new things. Yes, I jumped on the gallon of coconut buy since I make a lot of crustless coconut pie for all my carry-ins. I can’t wait to try this cookie recipe!!! I’m a big fan of honey so can’t wait to try that item. IN FACT, all the coconut recipes are really delicous.
