It’s pumpkin carving time so today I’m sharing a second recipe, one that is my kids’ favorite to snack on this time of year… Cinnamon Pumpkin Seeds

- 4 cups pumpkin seeds
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- vegetable oil or cooking spray
Preheat the oven to 350*. Grease a cookie sheet and spread the seeds out in an even layer. Lightly sprinkle with salt and cinnamon. Bake for 5 minutes. Stir the seeds and season with remaining salt and cinnamon. Continue baking, stirring occasionally, for 15-20 minutes, or until seeds are toasted.
